Winemaking: Organic Chardonnay, Pinot Noir and Ploussard grapes were hand harvested. Fermentation with indigenous yeast. Traditional sparkling wine method (Champagne) where the base wine was re-fermented in bottle. Aged for 18 months before disgorgment. Zero dosage. Small amount of sulphur on bottling

This Wine: Pink sparkling wine from a master of the Crémant style. Savoury, brioche notes combine with red berries and citrus. Rich and complex. Great as an aperitif but can stand up to food well. 

Notes on the Winemaker:  Domaine Overnoy is run by Guillame Overnoy who took over the reins from his father Jean-Louis. He farms vines in Obagna, Clos Jervigny and Cesancey. His great uncle is the legendary Jura winemaker Pierre Overnoy.
