Vegan friendly wine 

Winemaking: Organic Chasselas grapes were harvested by hand and underwent a 6 day period on the skins. Fermented with indigenous yeast in stainless steel tanks. No filtration, fining or added sulphur.

This Wine: The return of one of Fabio's most popular cuvées and the 2021 vintage doesn't disappoint. A wild skin contact wine with a toffee apple character and bright acidity. Can work with or without food. 

Notes on the Winemaker: Fabio Bartolomei is of Scottish and Italian descent but he now resides in the Sierra de Gredos region of Spain, not far from Madrid. He is quite a character and this really translates to his wines which are certainly at the deep end of the natural wine spectrum. Each cuvée tends to be a real surprise but they always burst with energy and personality.
