Winemaking: Biodynamic Kék Bakator grapes were harvested by hand. 25% were fermented in amphora vessels whilst the rest in stainless steel, all with indigenous yeast. Blended after a week and transferred to old Burgundy barrels where the wine rested for 11 months. No fining, filtration or added sulphur. Very small production
This Wine: Natural red wine with a light body. Acid driven with bright red berries and pink grapefruit. An incredibly rare cuvée from Hungary's most exciting producer. Only 300 bottles produced.
Notes on the Winemaker: István Bencze is a pioneer of natural winemaking in Hungary. His vineyards are situated on the Szent György hill, in Badacsony near Lake Balaton. He works meticulously in the vineyard, harvesting at multiple times in order the achieve the right balance in the final wine.
