Winemaking: Organic Tinto Velasco grapes were harvested by hand. Fermentation with indigenous yeast and bottled before the process was finished in order to create fizz in the bottle (ancestral winemaking technique - pet nat). Bottled with no fining, filtration or added sulphur. 

This Wine: Pink sparkling Pet Nat with a zippy and refreshing nature. Incredible purity of fresh raspberry and strawberry fruit on the palate. This is a great aperitif wine. Made from a grape rarely seen as a single varietal. 

Notes on the Winemaker: La Mancha is a a region associated with mass produced wine often lacking in character but Samuel Cano is a rare exception. He farms 35 hectares of vines but only keeps 10% for himself with which he produces exceptional wines made from local grape varieties. These are rustic wines from a hot and dry climate that offer a true sense of place.
