Winemaking: Organic Welschriesling, Pinot Gris & Pinot Noir grapes were harvested early by hand. The white varieties were fermented together in stainless steel with indigenous yeast. After 1 year this wine was combined with Pinot Noir which kick started a second fermentation inside the bottle. More similar to the traditional (Champagne) winemaking technique. Aged in the bottle for 9 months on the lees. Undisgorged. No fining or filtration and just a small amount of added sulphur.
This Wine: Natural sparkling wine that sits somewhere between Pet Nat and tradional-method style. Easy drinking but with a lovely complexity. Hazy white in the glass with a tiny hue of pink. Citrus, brioche and minerals. Great with or without food.
Notes on the Winemaker: The Domin & Kusicky Family produce natural wine in Velky Krtis. Viticulture has been recorded in this part of Slovakia as far back as the 14th century. David Kusicky took over as head winemaker after his studies in 2019 and is leading the domaine to biodynamic certification. He creates fun but very well made wines from a mixture of local and international grape varieties.
