Winemaking: Biodynamic Sylvaner grapes from 30 year old vines were harvested by hand and fermented with indigenous yeast in stainless steel. Aged in old barrels on the lees for 7 months. No fining or filtration. A small amount of sulphur on bottling only.

This Wine: Clean and easy-drinking white wine with a great balance of floral, citrus and herbaceous notes. Lemon with a hint of palma violets. Great as an aperitif in the warmer months.

Notes on the Winemaker: The Boesch family have been making wine in in the Haut Rhine area of Alsace since 1640. Today 11th generation winemakers Marie and Matthieu oversee the business which is certified organic and biodynamic (Demeter). They produced dry styles with native white varieties alongside fruit forward reds.
