Winemaking: Organic. Chardonnay grapes were sourced from another grower. Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, or filtration and just a touch of sulphur.

This Wine: Still white wine from Alice De Moor's negotiant project where she buys grapes from nearby organic growers. This is full bodied and rich but a slightly cooler vintage brings a bit more tension and acidity. Complex and ages very well.

Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
