Winemaking: Organic Gamay and Chardonnay grapes from the same plot were harvested by hand. Direct press and fermentation with indigenous yeast. Pinot Noir skins were then infused into the juice. Bottled with no filtration, fining or added sulphur.
This Wine: Natural wine made from a blend of red and white grapes. A unique bottle, even by Romuald's standards. Taken from one position it feels red and from another it feels white. Quantum wine! Citrus flavours dominate with subtle red berries and a hint of cherry. Drink it from the fridge.
Notes on the Winemaker: Romuald Valot worked with conventional winemakers in Burgundy for many years but craved to make wine in a more natural way. With this in mind, he bought a small plot of vines in a remote part of Beaujolais and took on a dogmatic approach to organic farming, sometimes not even pruning. In the cellar, all the cuvées are made with the carbonic maceration technique using whole bunches. The resulting wines are full of character and energy and strike a beautiful balance between simple and complex.
