Winemaking: Organic Chenin Blanc grapes were harvested by hand and fermented in stainless steel tanks with indigenous yeast. Aged here for 12 months before being bottled with tirage. Second fermentation inside the bottle (Traditional (Champagne) method) and aged on the lees for two years before release. 

This Wine: Natural sparkling white wine made in the Champagne style. This is rich and complex with a full body. Apples and pears lead the way with a biscuity and creamy finish. A versatile wine for food pairings. 

Notes on the Winemaker: Michel Autran produces dry wines in the region of Vouvrary which is usually synonymous with sweet and off dry whites. He works with 3.5 hectares of vines on some of the best terroir in this area. His first vintage was 2013 and he is now using biodynamic practices.
