Winemaking: Organic Chenin Blanc grapes were harvested by hand and directly pressed. Fermentation with indigenous yeast and aged in old barrels for 2 years. Bottled with no fining, filtration or added sulphur.

This Wine: Unique and complex Chenin Blanc with intriguing notes of herbs and fennel alongside rich fruit flavours of citrus and apple. Beautifully textured with a very long finish. Please note that whilst drinking wonderfully on opening, the wine begins to drop off after an hour or so therefore best to drink with a few friends

Notes on the Winemaker: Francois is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to the craft and avoids using sulphur at any stage as he believes it limits the potential of his wines.
