Winemaking: Organic Chenin Blanc grapes from 30 year old vines planted on clay and flint soils were hand harvested. Direct press before fermentation with indigenous yeast in stainless steel vessels. Aged for 9 months in tank. No filtration or fining. Tiny amount of sulphur added at bottling.
This Wine: Natural white wine with a medium body. This comes from an excellent vintage which balances body and acidity wonderfully. On the fruitier side of Chenin with notes of apple and citrus. Fresh, very drinkable and all at a great price.
Notes on the Winemaker: Despite initially deciding winemaking wasn't for him, Emile Pasquier returned to his family's 16 hectare Château Gaudrelle in 2022 to take over the reigns. The natural wine movement had changed his mind and he had already ventured to the Jura to study winemaking and viticulture. After developing a fresh vision for these Chenin vines in Vouvray, Emile quickly pushed the vineyard toward biodynamic farming, introducing horse plowing to revive soil health. Despite severe weather causing drastic losses in his debut vintage, the harvested fruit delivered stunning intensity, validating his direction. In subterranean rock cellars, Emile only employs native yeasts and relies on minimal intervention. His portfolio spans two distinct philosophies: crisp, early-bottled cuvées raised in stoneware and concrete, alongside dense, old-vine lots aged up to a decade in barrel. Blending Jura-style precision with local heritage, the resulting wines achieve a bright balance of structural depth and effortless drinkability
