Winemaking: Biodynamic Chenin Blanc grapes were harvested by hand. Fermentation in stainless steel with indigenous yeast. Aged for 12 months in old oak. No fining, light filtration and no added sulphur on bottling.

This Wine: Top Chenin Blanc from the Grand Cru classified site of Roche Aux Moines where only 8 different winemakers own vines. This is full and textured with a mineral and umami complexity. A rich and powerful white wine that is best served with food. Great ageing potential.

Notes on the Winemaker: Clémant Baraut hails from Bordeaux but ended up in the Loire valley in 1989 whilst working as an oenologist. After acquiring vines in the historic Savennières appellation, he began promoting biodynamic farming methods which helped champion the potential of this now renowned terroir. Clémant wanted to show just how powerful and complex Chenin Blanc can be so he also helped steer the wines of this region back to a dryer, non-botrytised style, after sweet wines had previously been so popular.
