Winemaking: Organic Savagnin grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels that were not topped up. This encouraged the growth of a layer of flor which the wine was aged under for 6 years. Bottled with no filtration, or added sulphur.
This Wine: Vin Jaune, the speciality of the Jura. Philippe's expression is slightly lighter but still with a hugely complex character full of spice, dried fruit and nuts. Will age tremendously if you can resist.
Notes on the Winemaker: Philippe Chatillon worked with the famous Jura producer Domaine de la Pinte for many years before setting off on his own in 2013. He uses biodynamic techniques in his vineyards of Jurassic grape varieties and then never adds sulphur in the cellar. He even uses music and sound in the cellar to bring harmony to his final wines!
