Winemaking: Organic grapes were harvested by hand. Fermentation with indigenous yeast in egg shaped amphora on the skins for 1 month. Aged for a further 12 months. 2019 and 2020 vintages were blended together. No filtration, fining or added sulphur.
This Wine: Natural wine made with skin contact but drinks more like a rich, rounded white wine with medium body and bright acidity. Mineral flavours dominate with a subtle orchard fruit character beneath. Ready to drink but will get even better with time. Should be served with food.
Notes on the Winemaker: Stéphanie Rouselle farms 13 hectares of vines close to Bordeaux in south-west France but her cuvées could not be further from the style synonymous with that winemaking region. These are wild and energetic wines that really stand out from the crowd and also age very well.
