Winemaking: Organic grapes were sourced from a grower in Alsace. Riesling grapes underwent direct press whilst the rest were macerated. Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, or filtration and just a touch of sulphur.
This Wine: Still white wine from Alice De Moor's negotiant project where she has sourced grapes from the Alsatian village of Itterswiller. Light but still with some texture and depth. Aromatic and floral with sone fruit and citrus notes. Clean and precise.
Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
