Winemaking: Organic Savagnin grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels. Aged for a further 4 years in barrels that were not topped up (oxidative winemaking). This encouraged the growth of flor on top of the wine which imparts flavour and texture ('Sous Voile'). Bottled with no filtration, fining or added sulphur.
This Wine: Rich and full-bodied natural white wine made in the 'Sous Voile' style synonymous with the Jura region.. Therefore this is an oxidative style of wine with intense umami flavours and a touch of spice. Pairs well with cheese and fish (including sushi).
Notes on the Winemaker: Julien Mareschal came to the Jura region at the age of 23 after studying winemaking in Burgundy and now owns 5 hectares of vines at high altitude in the famous region of Arbois. He he produces immaculate wines with the use of little or no sulphur using local grape varieties such as Chardonnay, Savagnin and Ploussard.
