Winemaking: Organic Chardonnay and Pinot Blanc grapes were harvested by hand. Direct press before fermentation with indigenous yeast in fibreglass. Aged for 7 months in tank. No filtration or fining. Minimal sulphur additions.

This Wine: Natural white wine with a clean and precise character. All about minerals with a profound sea shell character alongside citrus, green apple and floral notes supporting in the background. Honeyed finish. Round and rich but with balancing acidity. Great with seafood or chicken. 

Notes on the Winemaker: Domaine Derain began in 1988 when Dominique & Catherine Derain purchased vines in the Burgundian town of Saint-Aubain. Everything has been farmed according to organic and biodynamic principles ever since. The sublime cuvées are the perfect examples of natural Burgundy wines. The winery is now run by Julien Altaber & Carole Schwab who previously worked under the Derains.
