Winemaking: Grapes from vineyards in organic conversion were hand harvested. Whole bunches were spontaneously fermented with indigenous yeast in old oak barrels where the wine was aged for a further 9 months. Bottled with no filtration or fining and a small amount of sulphur.
This Wine: This is a Chardonnay made using barrels that have been topped up, in other words this is not an oxidative wine that Jura is often known for. Instead this is a pure expression of the grape that is less fruity and more of a mineral character with honeyed finish. Great alongside fish or cheese dishes.
Notes on the Winemaker: Benjamin Benoit took over his family winery at the age of 23 after his the unexpected passing of his father. He is situated in the famous region of Pupillin where he also grew up. Traditional Jura grape varieties are used to produce wine in very small quantities.
