Winemaking: Biodynamic Hárslevelü grapes from volcanic soil were harvested by hand . Fermentation with indigenous yeast. No fining, filtration or added sulphur.
This Wine: Only made in special vintages, this is biodynamic white wine made from the Hungarian native grape variety that is regularly used in Tokaj production. Ripe and round but with an aromatic edge. It reminds us of a really ripe Sauvignon Blanc. Complex and best served with food.
Notes on the Winemaker: István Bencze is a pioneer of natural winemaking in Hungary. His vineyards are situated on the Szent György hill, in Badacsony near Lake Balaton. He works meticulously in the vineyard, harvesting at multiple times in order the achieve the right balance in the final wine.
