Winemaking: Organic País grapes from 200 year old un-grafted vines grown on granite soils were hand harvested and de-stemmed. Fermentation with wild yeast in tank. Aged in old barrels. Unfiltered and bottled with a tiny amount of sulphur.

This Wine: Some of the most unique flavours we have tasted in a red wine. Juicy red & black fruit is complimented by a hint of eucalyptus, lime and coriander! That might sound crazy but it really works. This comes from Roberto's southernmost vineyard which potentially explains the pronounced herbal character. Perfectly balanced red wine with light to medium body.

Notes on the Winemaker: Roberto Henríquez hails from Concepción, Chile but travelled and worked with winemakers in Canada, South Africa and the Loire Valley before returning home to concentrate on the traditional Pipeño methods of winemakers in Chile. He visited us at the bar in early 2020 to share some of his latest magical creations but had to settle for a Millwall game as Arsenal were playing away that weekend :/
