Winemaking: Organic Pinot Noir grapes were harvested by hand before de-stemming. Crushed by foot and macerated for 11 days. Fermentation with indigenous yeast in stainless steel. Aged in glass demi-johns for 1 year and a further year in bottle. No fining or filtration. Very small amount of sulphur added on bottling.
This Wine: Natural red wine from Sophie Evans first vintage of her own vines. This is a special bottling of the Pinot Noir that has been aged 1 year longer. Light bodied with great intensity of red cherry fruit flavours and some peppery notes that add to the complexity. Highbury Library was part of a project to save old empty wine bottles that were then cleaned and re-used for these wines from Sophie. Tiny production.
Notes on the Winemaker: Sophie Evans worked with 2Naturkinder in Germany and made her own wines using some of the grapes from those vineyards but also with biodynamic fruit purchased from other growers in the area. She has now moved back to the UK and has her own vines down in Kent. 2022 was the first vintage from these plots of Pinot Noir, Pinot Gris, Reichensteiner and Bacchus. It's been amazing to watch Sophie's journey so far and we can't wait to see what comes next.
