Winemaking: Organic Ribolla Gialla and Fiano grapes from 2 plots were harvested by hand. Co-fermentation with indigenous yeast took place before the wine remained in contact with the skins for two month before being pressed into amphora. Aged in these vessels for 18 months. No filtration, fining or added sulphur.
This Wine: A natural orange wine from southern Australia which displays a refined and complex character. This is deep but delicate with notes of dried stone fruit and dried herbs. The winemakers describe this cuvée as everything they've "ever strived for in a wine". Only 600 bottles produced.
Notes on the Winemaker: Dane Johns and his partner Hannah have created something very special with their Momento Mori project. The wines are recognised as some of the most authentic in Australia, always made with a truly artisanal approach. All fruit is strictly organic, nothing is added in the cellar and oak is never used.
