Vegan Friendly Wine
Winemaking: Organic Silvaner grapes from a steep plot were harvested by hand. 2/3 of the grapes were fermented on the skins for 7 days and the other 1/3 was pressed after 2 days of skin contact. Fermentation with indigenous yeast in stainless steel where it rested for 22 months before additional ageing in very old oak barrels. Rested in old oak and blended in March 2020. Bottled in March 2020 with no fining, filtration or added sulphur.
This Wine: Amazing intensity of preserved lemon, developed and honeyed stone fruit and a herbal and spicy finish. Beautifully textured. This region is known as one of the best in the world for the Silvaner grape and when you taste this, you can see why. Best served with food.
Notes on the Winemaker: Melanie and Michael fell in love with natural wine whilst living just up the road from the bar (Archway) many years ago and decided they must return to Michael's father's winery in the small town of Kitzingen and convert everything to organic winemaking with no use of additives including sulphur. They are dedicated to produce wines that are alive and a true reflection of nature. We visited in 2018 and they are 2 of the most welcoming, knowledgeable and inspiring people you can meet.
