Winemaking: Organic Gamay grapes from 100 year old vines planted on granite soils were harvested by hand. Fermentation in whole bunches with indigenous yeast. Aged for 9 months in concrete egg. No filtration, fining or added sulphur.
This Wine: Natural red wine from one of the Cru sites of Beaujolais. Deep red fruit flavours with delicate perfume notes and an earthy, liquorice finish. Something reminiscent of the artichoke liqueur, Cynar! Full bodied with great acidity that provides energy and balance. Will age very well. Available at special price for a limited time!
Notes on the Winemaker: Despite not coming from a winemaking family, Frédéric Cossard has made a huge name for himself with his 10 hectares of vines in Burgundy as well as his negotiant project that allows him to purchase grapes from Beaujolais and further afield. He is committed to organic and homeopathic practices, ensuring pristine fruit and has become known for using concrete eggs and Georgian qvevris instead of oak barrels, resulting in lively, pure, and detailed wines.
