Winemaking: Organic Gamay grapes were harvested by hand. Whole bunch infusion and fermentation with indigenous yeast. Aged for 9 months in old oak barrels. Bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine made with grapes from the Beaujolais appellations of Chénas and Chiroubles. Light to medium body with a lovely depth and concentration of fresh fruit and herbs alongside dark, mineral elements. Nice bit of funk and a touch of CO2.
Notes on the Winemaker:
Romuald Valot worked with conventional winemakers in Burgundy for many years but craved to make wine in a more natural way. With this in mind, he bought a small plot of vines in a remote part of Beaujolais and took on a dogmatic approach to organic farming, sometimes not even pruning. In the cellar, all the cuvées are made with the carbonic maceration technique using whole bunches. The resulting wines are full of character and energy and strike a beautiful balance between simple and complex.
