Winemaking: Organic Malvasia de Sitges grapes were purchased from a nearby grower. Half remained in whole bunches whilst the other half were de-stemmed. Macerated for 2 weeks. Fermented with indigenous yeast. Bottled with no fining, filtration or added sulphur.
This Wine: A brand new cuvée from La Salada made with grapes from an organic grower close by. Like the iconic cuvée Sota Els Ametllers, this is made from the rare local grape variety, Malvasia di Sitges. You can expect a highly aromatic affair with lots of stone fruit thrown in the mix. The name means "The Green Ray" in Catalan. Only 90 bottles came to the UK.

Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada with partner Anna Serra in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
