Winemaking: Organic Ploussard grapes from a variety of plots were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels. Bottled with no filtration, fining or added sulphur.

This wine: Au Fils Des Generations is a cuvée Tony makes in difficult years when adverse weather has reduced grape yield. Instead of individual wines from different plots, all of the same grape variety go into one blend, in this case Ploussard. He sees this an expression of variety and vintage rather than specific terroir. This is light but concentrated with bright red fruit and peppery notes. Some dvelopment in bottle now has added to the complexity. 

Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines
