Vegan friendly wine

Winemaking: Organic Moscatel, Parellada and Xarel Lo grapes were harvested by hand. Fermentation with indigenous yeast. Bottled before the process was complete in order to trap fizz inside the bottle (ancestral winemaking technique, Pet Nat). No fining, filtration or added sulphur. 

This Wine: Sparkling white Pet Nat using two of the classic Cava grapes alongside the fruity and aromatic Muscat. Lucy always seem to achieve a brilliant balance in her wines and this is no different. Acidity, roundness and aromatics all combining wonderfully. Rare to find a sparkling wine of this quality at this price point. Thanks Lucy!

Notes on the Winemaker: Lucy Chilvers grew up in Cambridge before working in the natural wine scene in London and Brighton. She was inspired to go further and become a winemaker herself which eventually led her the Penedès region of Catalonia where she now farms 4.5 hectares of old vines. Grape varieties are primarily indigenous and her vineyards are treated with biodynamic techniques. No additions in the cellar.
