Winemaking: Organic grapes were hand harvested whilst very ripe and crushed by foot in whole bunches. Macerated for 9 days and fermentation with indigenous yeast in and open top vat. No fining, filtration or added sulphur.
This Wine: A pinky, peachy colour in the glass, the plan for this wine was initially to be a Pet Nat. Fernando came to disgorge and realised there were no bubbles. He then painstakingly emptied every single bottle back into a tank which meant the wine was exposed to a lot of oxygen. He was worried this could ruin the wine but when he returned, he was pleasantly surprised to see the oxidation has brought about some beautiful results. Rounded tropical and floral notes make for a very unique a complex wine that reminded us of Parma Violets. Beautiful texture and balance. Very small production.
Notes on the Winemaker: Chateau Baby Girl is an esteemed 300 hectare estate on the left bank in Bordeaux. Not really. It's actually the winemaking project of Fernando Berry, well known for his import company Otros Vinos that has been championing the pioneers of Spanish natural wine for years now. Fernando has built such a close relationship with so many of his winemakers that it has helped realise his dream to make his own wine. 2021 was his first vintage and we look forward to more in the future.
