Winemaking: Organic Silvaner grapes were hand harvested and spent 5 days on the skin before fermentation with indigenous yeast. The wine was aged on the lees in old barrels for 1 year before being bottled with no fining or filtration and just a touch of sulphur.

This Wine: Incredible Silvaner from this little known region. Intense but delicate notes of tangerine skin, herbs and black tea. Great acidity and a touch of salinity. The skin contact brings about a great texture and mouthfeel. Special wine that will age really well. Pair with fish or a milder cheese.

Notes on the Winemaker: Konni & Evi are based in Konni's home region of Saxony Anhlat just west of Leipzig. This little known region of the former DDR has some interesting winemaking history and the duo are keen to show the potential here, especially for the Silvaner grape variety.
