Pet Nat sparkling wine is style to come back into the limelight in recent years. The name Pet Nat is short for Pétillant Naturel and refers to the fact that the wine is naturally sparkling. Whilst still fermenting, the juice is bottled and the process continues inside the bottle. The carbon dioxide given off is trapped and creates the fizz. This is the Ancestral winemaking technique, the oldest way of creating natural sparkling wine. Pet Nat wine is often produced with zero added sulphur / sulphites.
