Winemaking: Pinot Noir and Pinot Meunier grapes grown in Crouch Valley, Essex were sourced by the winemaker. Pinot Noir press juice (from the making of Field Notes 1) was aged in old barrels for 11 months. The Pinot Meunier was infused into its own free run juice for a period of 3 weeks. The 2 were then blended wit no fining, filtration or added sulphur.
This Wine: This is a slightly deeper red than its sister wine Field Notes 1. However, the character is still all about fresh fruit. Clean and precise but still with plenty of character. A great example of where British natural wine could be heading.
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
