Winemaking: Organic Catarratto grapes were hand harvested and crushed before spending 4 days on the skins. Fermented with indigenous yeast in stainless steel tanks. No filtration, fining or added sulphur.  

This Wine: Natural skin-contact wine that displays a deep golden colour in the glass. Apricots, nuts and very saline. This is unmistakably Sicilian with a strong coastal identity. Great with seafood.  

Notes on the Winemaker: Fabio Ferracane is a natural winemaker who farms 5 hectares of vines in Marsala. This western part of Sicily is influenced greatly by the Mediterranean and Fabio's cuvées reflect this. Sun-kissed fruit, texture and a strong saline character are always present in these wines that are allowed to express themselves without the hinderance of sulphur.
