Winemaking: Organic Nero d'Avola, Nerello Mascalese and Perricone grapes from different plots were hand harvested and de-stemmed before fermentation in stainless steel tanks with indigenous yeast for 1 week. Aged in tank before bottling with no filtration, fining or added sulphur.
This Wine: Natural red wine with a light to medium body and juicy character. Cherry and strawberry flavours with a delicate herbal and spicy edge. Fresh with great acidity.
Notes on the Winemaker: Alessandro Viola's winery is situated in Alcamo, on the northwest corner of Sicily. Inspired by his father's small scale wine project, he began his own winemaking career. He now works 5 hectares of native vines that receive plenty of cooling influences. This results in fresh and fragrant wines that represent this part of the island perfectly.
