Winemaking: Organic Chardonnay grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels. Bottled with no filtration, fining or added sulphur.
This Wine: This is a white cuvée that Tony makes in difficult years when he has lost a lot of grapes due to adverse weather conditions. He uses healthy Chardonnay grapes from across all his plots to give "an expression of variety and vintage". Rich and concentrated but with balancing acidity, this is a wine that deserves a food pairing.
Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines.
