Winemaking: Organic Palomino grapes from the plot known as La Charanga were harvested by hand. Direct press before fermentation with indigenous yeast and aged in very old sherry barrels that were not topped up (oxidative winemaking). This resulted in the development of flor. Bottled with no filtration, fining or added sulphur.

This Wine: Very special and unique oxidative wine from the region famous for sherry. This is the fino, oxidative style but taken to an entirely new level and not fortified. Such a pure expression of southern Spain, this is sun-kissed with notes of almond, salty lemon and complex minerals.

Notes on the Winemaker: Fernando Angulo is a natural winemaker in the famous sherry-making town of Sanlucar de Barrameda in the the province of Cadiz. He does things a little differently to the majority of his neighbours in order to produce some of the most unique and special wines we have ever tried. He looks to make oxidative wines but uses nothing artificial to encourage the growth of flor. When it doesn't happen, he produces ancestral method sparkling wines instead. No additions ever.
