Winemaking: Organic Savagnin grapes from a grower in Arbois were hand harvested by Alice and were macerated in whole bunches for 2 months. Aged in old barrels for 1 year. No fining, filtration or added sulphur.

This Wine: A beautifully intense and aromatic expression of Savagnin from Alice Bouvot. This is rich and round but with racing acidity. Aromatic and spicy, this is complex and special. The wine gets better with exposure to oxygen so we recommend decanting before drinking. 

Notes on the Winemaker:  Alice Bouvot has developed a big cult following since starting her domaine in 2004. She produces many cuvées, some with grapes purchased from organic growers (these bottles have the striking gnome labels) and the rest from her own vines. Her wines are unique and invigorating to say the least and should be experienced by any natural wine fan.
