Winemaking: 20% whole bunch, 80% de-stemmed. Fermented in open top vats with gentle punching down before being aged on the lees. Half the wine is aged in stainless steel tanks and the rest is in old Burgundy barrels for 10 months. No fining, filtration or added sulphur. Only 4500 bottles produced

This Wine: White sparkling Pet Nat wine with a round body and lees-y character. Rich and complex with notes of lemon, white peach and minerals. Classy fizz that shines alongside food. 

Notes on the Winemaker: István Bencze is a pioneer of natural winemaking in Hungary. His vineyards are situated on the Szent György hill, in Badacsony near Lake Balaton. He works meticulously in the vineyard, harvesting at multiple times in order the achieve the right balance in the final wine.
