Vegan friendly wine
Winemaking: Organic Muscat grapes were hand harvested and crushed before a 3 day maceration period. The fermentation with indigenous yeast in concrete tanks. The wine was bottled before fermentation was complete in order to trap fizz inside the bottle (ancestral winemaking technique - Pet Nat). No filtration, fining or added sulphur.
This Wine: A special collaboration between Tenuta Foresto and Highbury Library. When we first visited Francesco, the first bottle we drank was a Moscato Pet Nat which had never been exported to the UK. We were desperate to get our hands on some and Francesco was excited when we mentioned the idea of dedicating it to each of our favourite football mascots. This is an orange Pet Nat made with juice that usually goes into the Favonio cuvée. Expect wild and bright flavours of mango, pineapple and apricots with electric acidity and a tiny hint of sweetness. Only available at Highbury Library and limited to 48 bottles. Notes on the Winemaker: Francesco Pozzobon hails from the Veneto region but now makes natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. he was inspired by the methods of Japanese farmer and philosopher Masunobu Fukuoka and aims to have as little impact on the natural ecosystem as possible. We visited in 2022 to try his wines in barrel which are getting better with every vintage. He previously lived in Highbury before heading back to Italy to start his winemaking project.
