Winemaking: Organic Cabernet Franc grapes were harvested by hand. Long maceration and fermentation with indigenous yeast. No fining, filtration or added sulphur sulphur.
This Wine: We haven't drunk our bottle yet but I am expecting a full but elegant wine with a great complexity of developed fruit and darker, earthy notes that have come with time in bottle.
Notes on the Winemaker: Etienne Courtois is taking over the running of Les Cailloux du Paradis winery from his father Claude. The family produce natural wines near the village of Cheverny in the Loire Valley and the focus is very much on indigenous and rare grape varieties, some of which are very unique to this area. No synthetic chemicals are used in the vineyard. Extended barrel ageing is preferred in the cellar which usually results in precise and powerful wines.
