Winemaking: Organic Pinot Noir grapes from south facing, single plot of 70 years old vines planted on soils of sandstone, clay & limestone in Mavilly were harvested by hand. Whole bunch infusion in concrete tank for 7 days. Basket pressed by hand before fermentation with indigenous yeast. Aged in old oak barrels. No filtration, fining or added sulphur.

This Wine: A new cuvée from a vineyard in the Hautes-Côtes de Beaune that has been named after the winemaker's daughter as they took over the vineyard at the time she was born. The wine is elegant and aromatic thanks to a dry year and cool weather just before harvest. Described by

Morgane as being very light, like a Poulsard from Jura. Very small production. We recommend decanting before drinking. 

Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
