Winemaking: Organic Pinot Noir grapes from vines planted in the 1950s over marl soils were hand harvested and spontaneously fermented with indigenous yeast. Aged in old oak barrels for 15 months. Bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine with a light body. Floral with a great concentration of strawberry, cranberry and cherry flavours. Tony's signature earthy and wild elements bring further complexity.
Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines.
