Winemaking: Organic Ploussard grapes were hand harvested and spontaneously fermented in fibreglass. Aged in old barrels for 2 years. Bottled with no filtration, fining or added sulphur.
This Wine: Delicate but intense red wine from Tony Bornard. This is the lighter of his two cuvées made from the Poulsard grape variety. Crunchy red fruit and fresh minerals!
Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines.
