Winemaking: Organic Aligoté grapes were harvested by hand. Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining or filtration and just a touch of sulphur.

This Wine: Always one of the De Moor's best cuvées despite the fact it's also one of the most affordable. Complex white wine with ripe fruit and a round, textured body. Apple, lemon and floral notes with a mineral edge.

Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
