Winemaking: Organic Grenache Blanc and Chardonnay grapes grown on clay and limestone soils were harvested by hand. The grape varieties were fermented separately with wild yeast after direct press. Blended one month later and aged in stainless steel for 10 months. Unfiltered and bottled with zero sulphur.

This Wine: Natural white wine with an intense mineral character and zingy citrus fruit flavours. This has already aged amazingly (in 2023) and acidity is still so high, it shows there is more room for improvement. Only 4000 bottles produced.

Notes on the Winemaker: Sylvain Bock makes natural wine in the Ardèche region of France where he likes to give the wine time to develop before release. He cultivates local grape varieties and never uses additions of any kind.
