Winemaking: Organic Pineau d'Aunis grapes from 70 year old vines on limestone soil were harvested by hand. 2 weeks whole bunch maceration before slow press into old oak barrels where it ages for 2 years. Bottled with no fining, filtration or added sulphur.
This Wine: A rare cuvée made in small quantities with Pineau d'Aunis grapes from Francois' plot named Bois Guyon. Light in body but with a hint of tannic grip. Beautifully intense hit of red fruit on the palate with pronounced notes of cracked pepper and something floral. This is so characterful. Pineau d'Aunis at its wild best!
Notes on the Winemaker: Francois is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to the craft and avoids using sulphur at any stage as he believes it limits the potential of his wines.
