Winemaking: Organic Aligoté and Gamay grapes were harvested by hand. Direct press into underground qvevri vessels for fermentation with indigenous yeast. Aged here for 9 months. Bottled with no filtration, fining or added sulphur.
This Wine: Natural white wine made in the blanc de noir style. Medium bodied with aromas of both red and citrus fruit. Lively minerals on the palate with refreshing acidity. A unique Beaujolais Blanc that works with or without food.
Notes on the Winemaker: Romuald Valot worked with conventional winemakers in Burgundy for many years but craved to make wine in a more natural way. With this in mind, he bought a small plot of vines in a remote part of Beaujolais and took on a dogmatic approach to organic farming, sometimes not even pruning. In the cellar, all the cuvées are made with the carbonic maceration technique using whole bunches. The resulting wines are full of character and energy and strike a beautiful balance between simple and complex.
