Vegan friendly wine

Winemaking: Organic grapes were harvested by hand. A combination of direct press and infusion techniques. Fermentation with indigenous yeast. Aged in ceramic eggs for 12 months. No fining, filtration or added sulphur.

This Wine: Natural rosé wine produced from a selection of vines that were planted with the original intention to make red wine. The elevation of the vineyard means these grapes don't fully ripen so a rosato style provides the perfect solution. This is delicate but complex with herbal notes complimenting the strawberry and raspberry fruit. Wonderful balance. 

Notes on the Winemaker: Tim Webber and Monique Wilton farm just over 4 hectares of vines situated 600m above sea level in the Adelaide Hills. This is a cool climate for Australia which allows for the production of delicate and restrained wines. The focus is on biodynamic farming with the vineyards surrounded by forests, orchards and gardens. In the cellar, nothing is ever added which would take away the purity of these special wines.
