Winemaking: Organic Chardonnay grapes from schist and marl soils were hand harvested and spontaneously fermented with indigenous yeast. Aged for 4 years on the lees. Bottled with no filtration, fining or added sulphur.

This Wine: This is from the Ganevat's own parcels of Chardonnay vines. A natural white wine made in the topped up, ouille style but with subtle oxidative notes. Beautifully intense minerals and floral elements alongside citrus, orchard and stone fruit. Will age for many years.
