Winemaking: Organic Colombard grapes were hand harvested and fermented with indigenous yeast in stainless steel. Bottled before fermentation finished to create fizz (ancestral method winemaking technique - Pet Nat) and disgorged 10 months later. No filtration or fining. Small amount of sulphur on bottling.
This Wine: White sparkling wine made in the Pet Nat style. Slightly off dry with some sweetness which makes it a versatile wine to pair with cheese or desserts that aren't so sweet. Low in alcohol and high in drinkability.
Notes on the Winemaker: Craig and Carla Hawkins began the Testalonga project in 2008 and are now making some of the most unique wines in South Africa. They work with European grape varieties such as Cinsault and Chenin Blanc along with a range of winemaking techniques. The Baby Bandito range offers amazing value for wines without additions.
